The reaction specificity of fucosidases varies with the biological origin. Fucosidase from Emiticicia oligotrophica does not require any divalent metal ions such as Ca2+ or Mg2+ and is not inhibited by EDTA. However, the presence of Zn2+ ions inhibits the activity of this enzyme

a-1à(3,4)-fucosidase is highly specific and cleaves non-reducing terminal fucose when linked a-1,3 or a-1,4 to complex carbohydrates. The enzyme is useful for the analysis of fucosylated N- and O-linked glycans using sequential digestion with exoglycosidases. It has also been used for the analysis and modification of glycoconjugates including milk oligosaccharides.
